Asparagus Soup

Asparagus was on sale this week for only 88 cents a pound at Sprouts and I couldn't resist buying a ton of it and finding a recipe to make some soup. I've had asparagus soup before, but I've never tried to make it - or any other blended soup for that matter.

So I found the recipe I wanted (above) and got to work cutting the asparagus, shallots, leaks, garlic. I got through the 4th four paragraphs on directions with out any problems. (YAY!) Then it came time to blend everything. I filled our smallerish blender about half way and it exploded hot asparagus puree everywhere! I screamed, rinsed the boiling hot liquid off my arm and thought I'd give it one more try. The same thing happened creating an even bigger mess! Not only were the kitchen counter, stove, a couple of walls, and floor covered in asparagus puree, but so was I!



The blender also wouldn't turn off and when I tried to flip the switch it would shock me! Awesome, I broke it.  I threw the blender in the trash and starting thinking about how else I was going to get all of this asparagus concoction blended. Then, I thought of my Manual Food Processor (MFP) from The Pampered Chef. I filled it about half way full and pumped the handle about 30 times, until it looked like it was straight liquid. When I went to take the lid off it was stuck and wouldn't come off!!! Evidently when you put hot liquid in it a vacuum is created and you can't get the thing apart! Great, now what? Well, I put the MFP in ice water and let it sit for about 20 minutes. When I came back the seal had been broken and I was able to get the lid off! SUCCESS!! I waited for the rest of the unblended soup to cool and proceeded to pulverize the rest of the soup...another SUCCESS!

The soup actually came out pretty good, not the best I've had though. Not sure that I'll make it again.

Lessons learned: Don't fill a blender too full. Don't blend hot food. Don't put hot items into the MFP.
